So the big game is this Sunday, and I cannot tell you who’s playing. I’ve heard who’s playing but cannot remember. I guess that means the Dallas Cowboys are not playing because I definitely would remember that! Super Bowl Sunday for us is a time for family, food, and friends! Sunday nights are “family night,” so the game will fit in nicely…
I will be serving BBQ Pulled Pork Sandwiches made in the crockpot! So easy and delicious…
PULLED PORK SANDWICHES
5 pound pork butt roast
1 carton beef broth
sliced onion
BBQ spices (I use whatever is on hand.)
BBQ sauce (We like Sweet Baby Ray’s!)
Cook on high for at least 6 hours. Drain liquid. Add BBQ spices. Keep cooking if needed. Serve with hamburger buns and add BBQ sauce if desired. I will also be making slaw as it is the Southern way to add slaw to your pulled pork sandwiches!
I will be making a couple of appetizers too! One healthy, and one not so healthy! This week I hosted our monthly get together with moms and kids. I served this Black Bean Dip, and it was the big hit! And so very healthy…
BLACK BEAN DIP
2 cans black beans
garlic powder (guessing 1 teaspoon)
1/2 bunch fresh cilantro
salsa (I love Verde salsa!)
fresh lime and lemon (a couple of squeezes each)
salt and pepper to taste
Put all ingredients into a food processor. Blend away and serve with tortilla chips or carrots! Delicious!
BBQ BACON RANCH DIP
2 (8 oz) packages cream cheese, softened
1 envelope ranch dressing mix
1/2 cup barbecue sauce
1 green bell pepper, chopped
1 tomato, chopped
1 1/2 cups cheddar cheese
Real Bacon Bits
Blend the cream cheese and ranch dressing mix together and spread in a pie plate. Spread the barbecue sauce on top of the cream cheese mixture. Layer the green bell pepper, tomato, cheddar cheese, and bacon bits. Enjoy!
