Today is the first day of summer, the longest day of the year, and it’s my Daddy’s birthday! We’re taking him to lunch and then Mother and Daddy are coming over for dinner. Daddy finally told me what he wanted for dinner at 10:30 last night as they dropped us off from seeing “Jersey Boys!” (And if you have not seen “Jersey Boys,” it’s at the top of best musicals in my book!) So what did Daddy request? Homemade Egg Rolls and Strawberry Pie! The egg rolls were a childhood favorite! And the Strawberry Pie was discovered the day before Father’s Day just last week…
I was standing in the grocery store line ready to check out. The cashier asks the man in front of me, “Are you making Strawberry Cheesecake?” He replies, “No, the best Strawberry Pie, and it’s for diabetics!” My ears perked up as he rattled off the ingredients to her. Daddy is diabetic, and I had no dessert for Father’s Day. I asked the gentleman again to repeat the ingredients, and then proceeded to turn around and grab those ingredients!
Best Strawberry Pie (And it’s for diabetics)
A large graham cracker pie crust (less carbs than a regular pie crust)
2 large containers of fresh strawberries, sliced
1 1/2 cups Diet 7 UP
1 T. cornstarch
1 large box sugar-free strawberry Jello
Cool Whip
Simply boil 1 1/2 cups Diet 7 UP with 1 T. cornstarch. Stir as it boils. After it comes to a boil, remove from heat and add box of sugar-free strawberry Jello. Stir together and place in refrigerator to gel just a bit. Add sliced fresh strawberries, mix together, and pour into graham cracker crust. Chill. Serve with Cool Whip! Enjoy!
Daddy was shocked with delight when I told him about the Strawberry Pie!
Although sugar-free, this pie does not taste like a sugar-free pie!
So it’s back on the menu for tonight! Thank you to the gentlemen in the grocery line! He has no idea what a gift he gave to Daddy! Don’t you just love stories like this…meant to be!
